Banana Bread

Two of my favorite activities are cooking & baking, and tricking people. So naturally, the cookbook Deceptively Delicious has been a major hit in our household. I have found and enjoy many recipes including oatmeal, macaroni and cheese, quesedillas—all with healthy and surprising twists.

Regardless of the fact that it’s written to get kids to eat veggies, we have found it to be effective even on grownups. I think my most favorite recipe is the Banana Bread. I love to bring it to Bible study or class or a dinner party and have people guess the secret ingredient.

*Spoiler alert*

What makes this banana bread so moist? Cauliflower! Yup. You steam and puree cauliflower and freeze it for later use in various recipes. You can’t taste it at all but it adds moisture and a bit of veggies to delicious banana bread. I made this tonight to bring as a present to my brother, Luke, but between Varun and I small slivers keep disappearing…I had better go eat more pack it up before it disappears.

Banana Bread


1.25 c whole wheat flour

.5 tsp baking soda

.25 tsp baking powder

.5 tsp salt

.5 tsp cinnamon

1/2 c. brown sugar

1/4 c. oil

2 egg whites

3 bananas

1/2 c. cauliflower puree

1 tsp vanilla

1/4 c. chocolate chips


1. Preheat the oven to 350 F. Grease an 8X8  or a loaf pan.

2. Mix the dry ingredients. Put aside.

3. Mix sugar and oil. Mix in the egg whites, banana, cauliflower and vanilla. Add the flour until just mixed. Add chocolate chips.

4. Pour into the pan. Bake for 55 minutes if a loaf pan, 20 if an 8X8.

    Have you ever made cake that had beans in it?
    I’ve recently stumbled upon several recipes, like this one for chocolate cake – it has kidney beans! It’s also gluten and dairy free (without any special ingredients or special flours).
