Apple, Sausage, Sweet Potato Casserole

In honor of the first day of fall, I’m letting you in on a family secret: this recipe.

As a kid, this was one of my favorite parts of fall as it’s dinner that is salty and sweet, and includes apples. This is easy to make in advance and great to bring to a pot-luck. Thanks to my Mom for the recipe!

Ingredients:
1 lb sausage
2 medium sweet potatoes*
3 medium apples
2 T sugar
1 T flour
1/4 t ground cinnamon
1/4 t salt
1/2 c water

1. Break sausage into bite-sized pieces and brown in a skillet. Drain excess fat and place in a glass 9X13 pan.
2. Peel and cut apples into bite-sized pieces and put in pan.

If you don't have an apple peeler, slicer and corer, you're missing out!


3. Peel, cut and cook sweet potatoes. Add to the apples.
4. Mix sugar, flour, cinnamon, salt and water. Pour over the sausage, apples and potatoes. Stir.

Cover and bake at 375 F for 50-60 minutes or until apples are tender. Serve with warm cornbread!

*Sweet potatoes vs. Yams. I think that in my family we used this term interchangeably. Maybe it’s an American thing? Maybe it was a my family thing. Since growing up and/or moving to Canada, I get the impression there is a difference. In either case, I used the orange version of this. Thoughts?
